Matar kachori is one which is filled with green peas, ginger and green chillies paste, some dry mango powder and many more.

Matar kachori is one of the best snacks item to eat in a winter seasons, all peoples loves to eat this tasty and crispy fluffy kachori with imli Ki chutney or green pudina Ki chutney weather there is elder peoples or there is young children.

So here is the full recipie with complete step by step procedure.

Ingredients:-

Kachori Dough

· 1 and 1/2 cups All-purpose flour/ Maida

·  1/2 cup Whole wheat flour

· Salt To taste

·Baking powder

· 2 tbsp. Oil for frying

For the filling

· 1 and 1/2 cups Green peas Boiled and coarsely mashed

· 2 tbsp. Oil

· 1/2 tsp Hing

· 1 tbsp. Zeera

· 1 tbsp. Ginger Grated

· 1/2 tbsp. Coriander powder

· 1 tsp Red chili powder

· 1/2 tsp Amchur powder

· 1 tsp Green chili Chopped

· 2 tbsp. Fresh coriander Chopped

· Salt To taste

· 2 tbsp. besan

Let’s see how to make crispy, fluffly matar ki kachori.

1. Sieve flour with salt baking powder and 2 tablespoon oil.

2. Mix well with your fingers.

3. Add little water and knead to make a soft dough.

4. Cover the dough and keep aside.

5. Heat oil in a pan or kadhai.

6. Now add hing and jeera in a oil.

7. Now add mashed green peas and all dry spices i.e; red chilli powder, salt, turmeric powder, coriander powder, dry mango powder.

8. Add ginger garlic and green chilli paste in it for better taste.

9. Now add besan in it and stir for couple of minute, and let it cool completely.

10. Make 5-6 small size ball from dough.

11. Place a ball in a wooden disc or flatten space.

12. Roll it in a small size roti with rolling pin.

13. Place a peas filling in a center of small roti. Brush the edges with water so that dough sticks very well.

14. Bring all the edges together in the center and join them.

15. Roll a ball with the help of rolling pin to make kachori.

16. Heat an oil in a pan.

17 After that put the kachori in an oil. Fry them in a low to medium flame or fry them till it becomes golden brown colour in both side.

Instructions:-

For making dough

  • Take flour and salt in a bowl and mix well.
  • Now add oil in it.
  • Knead in to soft dough by adding water in it.
  • Cover with a clean cloth and keep aside.

For making stuffing

  • Boil the green peas in cooker.
  • Mashed them coarsely.
  • Heat the oil in a pan/kadhai.
  • Once the oil is heat add cumin, hing and jeera in it.
  • Then add the ginger-garlic paste and green chilli in it.
  • Add mashed green peas.
  • Now add all the dry spices like red chili powder, turmeric powder, salt, coriander powder, amchur powder and mix it well.
  • Now add some besan for binding and saute it for couple of minute.
  • Let it cool completely.

For making kachori

  • After some time knead dough once again for smooth out. 
  • Make small size ball from dough to make kachori. 
  • Take one ball in a wooden disc to make flatten small size roti. 
  • Now add 1 tablespoon stuffing in the center of roti. 
  • Brush water on all the edges. 
  • Bring together all the edges and press gently. 
  • Again roll it with the help of rolling pin. Prepare all the rest of kachori like these only. 
  • Heat oil in the pan. Once oil is heat drop 2-3 kachori in a pan. 
  • Fry both the side properly in low to medium flame. 
  • Fry them until it becomes golden brown colour. 
  • Drain them on tissue paper to remove excess oil. 
  • Serve kachori with imli chutney and pudina chutney.

Tips:-

  • For making fluppy, crispy kachori proportion of oil is important.
  • Keep the dough cover with clean and moist cloth.
  • While making kachori keep the edges little thinner.
  • Adding amchur powder is optional.
  • You can also add lemon instead of amchur.
  • Adding ginger-garlic paste is optional, you can add it as per your taste.
  • You can also add chopped onions in a stuffing for better taste.
  • If kachori tears while rolling add some water and flour for binding.
  • Do not drop the kachori in high heat oil nor in cool oil, should be medium.
  • Always remember fry kachori in a medium flame.
  • You can also serve with green chutney or ketchup also.
